Carolina means fine dining at St. Regis Punta Mita Resort. It really does. It also means exquisite cuisine, superb wines, elegant furniture and table ware, superior service and just about everything else you'd expect to experience in a five star restaurant. It would be easy to wax lyrical about Carolina, but I'm not going to, except to say it's just about as good as it gets. If you decide to give it a try, I suggest you go with an open mind and the will to try something new; you won't be disappointed.
